Brandy butter

Whip up a batch of brandy butter, then enjoy it with mince pies, Christmas pudding and more Christmas baking recipes. Why not also make some  royal icing to decorate your festive bakes?

  • salted butter 100g, softened
  • icing sugar 75g
  • brandy 2 tbsp


  • Step 1

    Put the butter and icing sugar in a bowl and beat with an electric whisk until pale and lightly whipped.

    Step 2

    Briefly whisk in the brandy until just combined. Taste and add a splash more brandy if you prefer a stronger flavour. If the butter splits when adding the brandy, add 1-2 tbsp more icing sugar to bring the mixture back together. Chill until ready to serve.
