Chimichurri sauce

  • shallots 2 long, roughly chopped
  • garlic 1 clove
  • red chilli 1, roughly chopped
  • coriander a small bunch, leaves picked
  • flat-leaf parsley a small bunch, leaves picked
  • oregano a handful of leaves
  • red wine vinegar 4 tbsp
  • olive oil 5 tbsp


  • Step 1

    Tip the shallots into a small food processor, then peel the garlic and add it along with the red chilli. Pulse until finely chopped.

    Step 2

    Add the coriander, parsley, oregano, red wine vinegar and olive oil. Season and pulse again until the mixture is saucy, then serve.
